This is a dish I created last week whilst in Iceland. The guys I was staying with came up to me one night and said ‘So, your profile says you’re a good cook. Can you cook us something?’ Well of course I said yes and I quickly set about trying to invent a vegetarian version of something you might call Australian cuisine. The result is the recipe listed below, which far surpassed my modest expectations. The recipe below is the most recent incarnation of it which I made tonight for a group of 12 Danish university students and as such, includes meat. To make it vegetarian simply increase the mushrooms and eggplant by about 30%. Cook as normal except for the extra eggplant, this eggplant should be diced and cooked with the mushrooms and main mix. It’ll give the dish a really killer texture.
